Greenstein's Bakery - Baking Bible - 4th of July Cheesecake

This was a wonderful cheesecake but there are a couple things I would change about the recipe:

  1. The cheesecake part should be first. I had all the components made only to discover that the cheesecake had to be refrigerated before assembly. This was rather frustrating. Making the cheesecake first would have allowed me to make the other parts while the cheesecake was cooling and save time.
  2. Why was there lemon juice in the cheesecake recipe? It should have said it was a lemon cheesecake. There are several other cheesecake recipes that Rose has surreptitiously slipped in lemon juice. Why?? 
  3. I used the same spring-form pan as the cheesecake recipe and did not have to cut or modify the shape of the bottom layer. Not sure what the idea was here to use a different pan than the cheese cake.

Lovely red cake. Someone seems to have taken a 'nibble'...

Not sure why we strained these, but I went with it. 

No bath, just a cake strip.

Everyone enjoyed it.

  1. You were smart to use the same pan. Trimming the cake seemed like an unnecessarily fussy step.
    Rose does love the lemon juice!

    1. We like lemon but only when we want lemon cheesecake. Good idea to sub with vanilla.

  2. Yours looks so nice and light/fluffy :) Lol you and your family don't like lemon? My step son gets me to take out the lemon juice in cheesecakes and replace with vanilla and water to make up liquid amount if necessary. --- Jeniffer

  3. Hi Mendy: I thought about using the springform pan for the red velvet layer, and you are wise to have done it that way! It wasn't too much fun to trim that cake with a razor blade! I think the lemon juice is just to add that extra little tart zing to the cheesecake. In any case, "Rose knows...." It sure is a good recipe, isn't it? Yours looks great, and you have the most lovely kitchen helper!

  4. Mendy, I just can't get over how grown up your daughter is! And do you mean cake batter can be baked in a spring form pan? I didn't know this! Glad you mentioned to bake the cheese cake first. So was the lemon flavor predominant or a background note?

  5. Yours looks great! I dont object to lemon juice, figure it may zip up something else -I like the cake though. Great shot of your very busy sous chef!

  6. i agree with you on the order of thing. I baked first the cheesecake knowing that it will need some waiting and than did the rest. you did amazing job with the help of your beautiful daughter.

  7. Like Rose, I too like lemon juice. Lemon juice in cheesecake brings out the flavor of cheesecake imo. Makes it less sweet and cuts the richness a bit. I find that that there is something missing if I omit lemon juice in cheesecake. :) Your cake looks wonderful! Is that your new toaster oven?

    1. Your probably right about why Rose puts in the lemon juice. She claims not to like things "too sweet"

  9. Your post made so much sense. I often wonder about certain repetitive and/or redundant steps. Your cheesecake looks great and whoever nibbled on the cake just couldn't resist...high compliment!
