Greenstein's Bakery - - Baking Bible - Cookie Strudel

ב׳׳ה

I knew this was a wonderful recipe. Glad to make this again.

Mis en place

Mixing the ingredients. I ended up just finishing by kneading by hand. Still came out nice and flakey.

My wife got me currants. I had left out the book on the page of the recipe and she surreptitiously  got me the ingredients.

אשת חיל מי ימצה...

Chilled dough.

Rolled nicely.

I should have made the apricot lekvar as the flavor would have been more nuanced and subtle. This store-bought sort of hits you over the head. My 8 year old told me the flavor was too strong for her.

 Rolling.

Toaster shot.

Coating with cinnamon sugar.

They really looked great.

Glad I doubled this recipe. Heirloom recipes are the best!

 Arrgh. Flakey.

Greenstein's Bakery - Baking Bible - Fudgy Pudgy Brownie Tart

ב׳׳ה

This is winner. The browny is decent but the tart crust is really nice, rich and really chocolaty. It is delicious and soft and easy to work with.

Mis en place. I actually ended up using trader Joes walnuts which tasted very fresh and nice.

I used the hand mixer and added the powdered sugar to the dry ingredients.

Came together with the butter nicely.

This tart dough was really easy to work with. The butter was cold but not hard. U rolled right away and then refigerated it a bit to pull it off the parchment.

It was delicious just a dough.

 Chocolates.

 Very gloppy brownie batter.

 Toaster shot.

 Looks so nice.

So this little one stuck her fingers all over it. I was going to get upset but then my wife pulls out of her hat a brand new glass cake stand. After placing on the stand it looked pretty again.

Greenstein's Bakery - Baking Bible - Banana Chocolate Chiffon

ב''ה

This fabulous cake will definitely be made again here. A sponge cake with a real banana flavor. Fabulous!

Dry ingredients

It seems sponge cakes can handle a certain amount of liquid. Perhaps chiffon sponges more than others? I've been looking to perfect a honey sponge cake recipe but have not succeeded yet.

Batter. I did not use the food processor since it still smelled like tehina. So I simply mixed the liquid ingredients in the mixer.

Its been a while since I got to whip a lovely foam.

Ready to go in.

Since this cake was parve I got to use the big oven for it.

The chocolate and banana is such a wonderful combo.

My wife found it blissful.
