Greenstein's Bakery - Baking Bible - Pecan Praline Meringue Ice Cream Sandwiches

Toasted Pecans. They really did add a nice flavor to these.

I was thinking, "That is a lot of muscavado. These better be good!"

 They were a little runny...

I atcually like that they came out nice and thin.

These really were more delicious then I expected them to be. A real treat. However, most of the kids slurped out the ice cream and left the cookies with the offending nuts un-eaten.

  3. I like them flat and caramelised too! Much easier to eat like that. Lol, best part of an ice cream sandwich being a kid is the slurping out the ice cream :) --- Jeniffer

  4. I love seeing the kiddos in the kitchen. I'll be making these this afternoon and have a feeling I'll like the cookie version better than the ice cream sandwich version. Time will tell. Have a great week.

  5. Hi Mendy: Mine were not as dark, but I didn't have the special sugar and had to use what I had on hand--a mixture of light brown and dark Muscovado. Mine were puffy but I think when I make them again I will make them thin and crispy like yours. Shayna is lovely as she can be!

  6. Honey and milk under your tongue is a perfect description. I splurged and bought Muscovado sugar and I too cringed at the amount called for. Being that I never tasted it before, I found it so delicious. I'm hooked, unfortunately. BTW, my Grandmother loved to call me "my Shayna Punim."
