Heavenly Cake - Coffee Chiffonlets with Dulce de Leche Whipped Cream

Mazel Tov to Rose on Heavenly Cakes winning the award! May she have much success!

These were great. Mini angel food cakes with a rich coffee and cream motif. The 72% chocolate shavings on top did not hurt anything either.




Kaluha does not presently have Kosher certification so I had to use some other coffee liquor. I just brewed some esspresso instead of the instant and left out the water.


Mix with the egg whites.



Two batches.


O.K. I realize now that putting these upside down was pretty dumb. I do not think this helped very much. It probably makes more sense with real mini angel food pans.


Why did Rose say not to grease the pans? It does not make sense to me.

Almost there... I'll definitely make this again, maybe as a big cake.

  1. Maybe the no grease so they have the sides of the pan to climb, like an angel food cake?
    They look quite nice dressed in their lovely dulce de leche whipping cream.

  3. I think Vicki has it--ungreased, the batter doesn't collapse during baking. Mine came out without too much struggle, even the ones in the non-non-stick Mary Ann pan. The roughed up surfaces soaked up more of the syrup, too!

  5. I agree with Vicki. The cake has to climb up the sides, just like an Angel Food Cake would.

    Your cakes turned out great. I just now realized that the recipe called for choc shavings. I just used a choc glaze on top (but I was trying to cover up some "issues") :o)

    Like Faithy, I took a pass on the baking this weekend (not because I was sick, mostly because of lazyiness!).

    I guess it makes sense that the non-greased pans help the angel food climb up. I wonder if it was really necessary in this cupcake version though.

    I added a bit extra dulce de leche. I think that's how the whip cream thickened like that.
