Heavenly Cake - Coffee Chiffonlets with Dulce de Leche Whipped Cream

Mazel Tov to Rose on Heavenly Cakes winning the award! May she have much success!

These were great. Mini angel food cakes with a rich coffee and cream motif. The 72% chocolate shavings on top did not hurt anything either.




Kaluha does not presently have Kosher certification so I had to use some other coffee liquor. I just brewed some esspresso instead of the instant and left out the water.


Mix with the egg whites.



Two batches.


O.K. I realize now that putting these upside down was pretty dumb. I do not think this helped very much. It probably makes more sense with real mini angel food pans.


Why did Rose say not to grease the pans? It does not make sense to me.

Cake Bible (based) - Cointreau Cake

I am skipping the chestnut sand cake as I have not been able to locate the flour. :(

Grand Marnier is not Kosher so I substituted Cointreau. Especially with the orange blossom water, this cake had a very intense flavor!

Heavenly Cake - Whoopie Pies

These Whoopie Pies were great and the kids just loved them!



Muscavado Brown sugar etc. My daughter says she is going to save up her allowance to buy some muscavado brown sugar for herself! We use it on its own as a topping for vanilla ice cream instead of chocolate syrup.

I used our Starbucks coffee scoop.


Made four at a time in the toaster so I could make the buttercream with this. Next time, I'll just make it parve and use marshmallow fluff. A friend of mine suggested cutting in some coconut. Hmmm.

The general rule I use for Rose's buttercream is to cut the butter down by half. I do not like to taste the butter in my butter cream and would rather have it there to as a behind the scenes enrichment of flavor and texture (the, um, flabby belly of the buttercream perhaps?) This time I used  a bit less than 2/3rds the butter (1 3/4 sticks) and the butter flavor was still too much.

Heavenly Cake - Jansci Torta - Passover Cake #3

Since I already made the Banana Refrigerator cake for "Free Choice" week, I figured I would post the Jansci Torta I made over Passover. You can review my banana cake post, if your so inclined, here.

It was really great! Chocolaty - Walnuty. Perhaps the best of the Passover cakes I made in its unadorned state.




Mis en Place:


Mix beaten egg yolks with chocolate/walnuts.



Beat egg whites.


Fold Fold...


Bake Bake! It was nice and fluffed and filled about 1/2 of the pan.


I could pretend it all went well but, in reality, it was not completely baked when I took it out and had to lop off part and re-bake it. It got a little messy. 



"Shlisel" - "Key" Challah

The first Challah after Passover is traditionally baked with a key inside, or in the shape of a key, and is a "Segulah" "propitious act" that helps bring livelihood. I wrapped the key in tinfoil.

Heavenly Cake - Pecan Torte - Passover Cake #2

Mmmm. This cake was wonderful. especially when eaten still warm! Toasted Pecans are just so luscious.


Made some super-fine sugar.


All ready to go!


The "Ez Man" was with me for moral support.


Whip the yolks. I must have under whipped them as I ended up without the full volume.


Fold in the pecans.


I added some espresso made in the percolator.


Whip and add the egg whites.



All ready. It fill up 1/4 of the pan and not 1/2. It rose to about 1/2 the pan after baking. Still looks pretty close to the picture in the book though, I think.


Oh no! It split. Mimi says its in honor of the Splitting of the Sea which happens on the 7th day of Passover.


Perhaps it was because the only cake rack I could find was the (clean) chicken rack. As you can see, some of the cake tried to go through the holes and left its desiccated cake innards on the rack, as described by Rose in her latest video.


Kosher for Passover, fish gelatin.



Whipped the parve cream with the coffee. One of the nice things about using frozen parve cream is that its already nice and cold when you whip it.


Yum! Again, another non-Passover-tasting Passover cake.
