Greenstein's Bakery - Baking Bible - Sour Cherry Chai


Did someone say its "Chai" day today?

Mis en place. Easy to find canned sour cherries in the kosher marketplace.

I figured I would go 'maverik' and simply knead in the butter by hand to see what would happen. After all I am already an experienced pie maker (having made one pie already…)

Seems to come together O.K. Another change was that we only had whipped cream cheese. I think it actually contributed a very nice smooth texture and the flavor was fine.

Lovely pitted sour cherries. This recipe came together real quick.

We simply peeled flipped the dough over the pie plate, while still on the parchment and peeled it off.

And, as they say in yiddish "Gevaldig!'…

Or, maybe it was the roller-skates…

Or first attempt at making the strips was not successful. We put it in the freezer for 5 minutes.

חי is a word that means life and looks suprisingly similar to the pi symbol π. A connection between the infinite source of life and a number that goes on forever?

I really love how this pie tasted. I went back for seconds.

I may have to take a brake from baking and blogging for a couple weeks to get the house and kitchen ready for Passover. I'll blog if I can.

  1. Have a Happy Passover! Those Rabbis are clearly having fun! Your lattice top turned out nicely on a very delicious looking pie. Such a cute smile on your daughter and the roller skates gave me a giggle. So miss those days. Goes by too quickly. I need to find some of that pastry flour. I cut AP with cake. Pastry flour is hard to find here for some unknown reason.

  3. Happy Passover! Seems like it is so easy to get sour cherries in can. I can't find canned ones either...all kinds of fruits except sour cherries. Maybe they are not so popular here. I love that pi symbol you had on your pie! :D I couldn't find my pi cutter..i think I have somewhere.. or do I? ..

  4. Hi Mendy! Roller skates in the kitchen takes the cake (or the Cherry Pie in this instance). So sweet. The memories your children will have of you baking in the kitchen will be legendary, I'm sure. This pie was the best for me, even though I didn't use sour cherries. I still LOVED it.

  5. Oh you're using Pastry Flour and kneading everything in a bowl! I used to use it but keep forgetting to get them for this bake-a-long. It tasted so much better with pastry flour. Happy Passover to you and your family, Mendy! We will miss your post for sure.

  6. Haha I love your definition of an experienced pie maker. I'm sorry to say I thought the pastry shape was a moose until Faithy pointed out it was a Pi symbol! Very clever of you.

    What do you have to do to prepare for Passover? Is it a complete house cleaning? This seems to be a part of many different cultural celebrations. I hope it all goes well.

      I'm not sure which cultural cleaning your are referring to. Spring cleaning? Something Australian?

      Passover cleaning is a little different than 'spring cleaning'. Its simply getting rid of all the leaven. A real bakers holiday.

    2. Well now you ask.. I can think of Chinese New Year, and I think possibly Eid where you have clean house and new clothes. But maybe I read too many fictional books!? I read your link about the chametz and the cleaning. It sounds a bit daunting but that's probably because Im not a big fan of cleaning...

  10. Lovely toaster shot. Your pie turned out very nice too. The best shot is the roller skates though. Is it correct to say Happy Passover?
