Greenstein's Bakery - BB - Ischler

I could not get Dr. Suess out mind while doing this. We kept calling it the 'The Once-ler'.

Mis en place.

The 'Ez Man' was with me for moral support.


I used ground almonds. 

Even with the egg etc this was still difficult to roll out. With more liquid/butter or other fat I think it would be easier to roll. I assume that the lack thereof makes it more flakey? Don't know.

Planes, trains, airplanes birdies, ice cream... :)

The toaster shot.

Baked. The cookies on their own had a lovely almond flavor and a nice soft texture.

 ’וַיֹּצֵא פֶרַח וַיָּצֵץ צִיץ, וַיִּגְמֹל שְׁקֵדִים...’ – "...Out came a bud that flowered and produced almonds."

I used apricot preserves...

...and strained it. Next time, if I use preserves, I'll try raspberry.

I think I skimped on the chocolate a bit and ended up with a lot left over and a less pronounced chocolate flavor in the cookie.


Not all the cookies were evenly rolled but they were perfectly delicious. I'll have to try and use Rose's method of rolling evenly in the future.

For better or worse, the almond flavored cookies together with the preserves had a flavor that reminded me of a peanut-butter and Jelly sandwich. Perhaps, if I toned-up the chocolate and used the lekvar instead of the preserves, it would not have had that effect.

  2. Oh.. I see a that everyone used different cookie shapes!!! I should have venture more outside of the box with mine... And Mendy...your kids!!!.. I can't even, they are so cute!

    I like the cookies made with the unblanched almonds. I already had blanched in the cupboard so I used them but the dough isn't as interesting.

      The kids loved the shapes but they did not really like the cookie. A couple would not touch it because of the apricot...

  5. I love all your shapes! I can't believe the Ez-man has grown so much. Wasn't he a brand new babe when we were Heavenly Bakers?? Time flies.
    I did some cookies with blackberry jam, and they were great. If you do make them again I totally support using a berry jam.

  6. That's the Ez Man? Not possible! He's grown so much! What a handsome lad. So glad to see the toaster oven. It's very comforting for some reason. Cut out peanut butter and jelly sandwiches would have been alot easier.

  10. I thought it would be the actual cookie part that the kids wouldn't like because of the nuts, but I figured they'd love chocolate and jam. Sometimes there's no accounting for other people's taste.

  12. Awesome shapes! Ez man is a giant - amazing how time passes is quickly. I cracked up at your comment about skimping on the chocolate - they looked absolutely laden in the photo!

    Love that toaster oven but don't envy you cooking with it!!
