Greenstein's Bakery - BB - Gingersnaps

These are fairly decent cookies. I used fresh ginger which, I think, toned down the ginger flavor a bit (unintentionally). The regular ginger powder spice may have left a stronger ginger flavor. It had a very nice ginger aftertaste at any rate.

Mis en place (ignore the raisins, they are for next week...)

The 'Ez-man' was me for moral support.

Freshly ground ginger in my coffee grinder. I ended up using about 5 teaspoons since I could tell the flavor was not going to be too strong. I don't mind ginger flavor in my coffee beans since it is anyways a regular part of Yeminite coffee Hawajj (although I prefer mine light on the ginger and heavy on the cardamom...)

Butter and Corn syrup. I wonder how much this would have been better with beurre noisette?

'Crumbly'. I used a combo of superfine and brown sugar. 

Final batter. 

It was a bit sticky. I'm not sure why my cookies did not get cracks in them. Maybe the extra liquid from the fresh ginger caused this.

Toaster shot. It took a batches to finish all the batter. Meanwhile, it was in the fridge.

I think using the cornsyrup gave the cookie some kind of smooth texture. I wonder what Rose had in mind with that? (The 'Stoly' was there ready to toast if I had another toaster explosion. No such luck...)

  1. I wonder if your dough is more sticky because of the water from the fresh ginger? Maybe this is also why it didn't crack? The cookies looks good! Great idea using a "stoly".

  4. I was so tempted to use fresh ginger and/or candied ginger but I refrained. Next time I will! EZ-man is quite the lad these days. Time is going by too quickly.

  5. Fresh ginger! What a great idea! I found the ginger flavor almost too subtle, and I used dried. I made multiple blunders but they turned out great after I turned a quick and easy recipe into an ordeal!! Your little EZ-man is a handsome guy!

  7. Good idea on the fresh ginger and yes you have to use loads (official conversion rate) to replicate the dried ginger.

    They look good even without the cracks. Ez is all grown up, but still that cheeky grin!!

  8. Hi Mendy, I never considered using fresh ginger. Maybe the moisture from the ginger was why you didn't get cracks. Don't know, but no matter. They look delicious.

  9. Fresh ginger is juicy so that's probably what made your dough sticky. Cracks or no cracks, your cookies look great! Love seeing the picture of your kids - they're all so cute. Glad you mentioned cardamom - it's one of my favorite spices. One more thing, you can "clean" your coffee grinder by grinding a piece of bread or some dry rice in it - then brush out the dusty crumbs. Works really well.     2. Great tip! My husband wanted to grind habanero peppers in my grinder. I suspect even bread or rice wouldn't get rid of that heat. :) Thankfully he bought his own and labeled it quite well.

  10. coffee with ginger and cardamom? sounds delicious. so the stoli was in case there was a toaster explosion? like "drink if the toaster explodes?" i want to play that game, too!

  11. Your kids kill me every time with their cuteness. Just seeing them on your post makes my happy. I thought of fresh ginger, but was to chicken to try it, plus I was going for fast and easy.. and putting an extra step in there was not in the plan. I second Patricia tip on cleaning your coffee grinder - I use the rice method myself.

  13. I wonder if you could use the same technique for eggplant and put the ginger in a paper towel to allow the juice time to seep out? I'm going to try that sometime...Your cookies look great.

  14. Your cookies look wonderful and tasty! Curious about the fresh ginger, but from what the others say I think I will do it plain when I bake them tomorrow. Kids growing, and more adorable. ; )
